Mama's Chocolate Cookies

I'm going to share a HUGE secret today! One that is probably going to be surprising to many, so sit down.

I make chocolate cookies for a lot of picnics and occasions. The cookies are always gone in no time and a lot of friends have asked for the recipe. I say, "it's my little secret."

Well, I'm going to share the secret recipe and it's going to be a shocker to most that have tried these lovely cookies!

It's starts with a chocolate cake mix (YES, really!) I like to use Duncan Hines Moist cakes mixes. There it is, my secret is no more.

Chocolate Cookies from the Heart

1 stick of butter
3 T. brown sugar
2 eggs
1 chocolate cake mix

Mix and place on cookie sheet. DO NOT GREASE THE COOKIE SHEET.

Bake at 350 for about 10 minutes.

Tomato Cucumber Salad

Tomatoes are here....finally! Everything is ripe and ready for the picking and I couldn't be more excited. I'm like a kid in the candy store during this time of the year, so says my husband. I wait all winter for that first taste of a vine ripened tomato and when it arrives- life couldn't be more sweet.


I was at the farm earlier this week and mom and I were busy in the kitchen cooking dinner and I told her I would make the salad. We had just come up from picking produce from the massive garden my parents grow each year.

Grabbed a bowl and started throwing in a few Cherokee Purple Tomatoes, cucumbers, onions and some seasonings. What was created was my ultimate favorite summer salad- made with truly fresh and local ingredients- straight from my family's farm. (Ahhh, life is so sweet!)

If you've never eaten a tomato cucumber salad, you're missing out. I would make a dinner out of this salad last summer, while pregnant with our son Caston. And, the best part is this is a healthy meal you can feel good about.

Be sure and stop in at the farmers' market to pick up your ingredients. Try and choose small cucumbers- as they are so much tastier when picked young. Enjoy!

Tomato Cucumber Salad

3 small cucumbers, sliced
2 -3 medium tomatoes, cut in chunks
1 med. red onion, sliced
1 green pepper, sliced in rings
1/4 c. oil
1/4 c. vinegar
2 tbsp. sugar
Dash of pepper
1/2 cup feta cheese, optional
1/2 tsp. basil
1 tsp. garlic, minced

Combine all ingredients and chill. Serve cold.

Another Day, Another Story

Our son has been persistent on waking up at 4:30 am every morning the past week- which before he slept till at least 5:30 am. He's teething so, I'm sure that has a little to do with it. But, we've been trying to make him hold off for a feeding 10 minutes extra each morning. (That's what I've read to do...but I've learned that the so-called expert books don't know it all.)

My husband was out of town one night this week and Caston woke up crying like no other...nothing would make it better so I made a bottle for him. (He's been switched over to formula now.) He went to town eating...when Caston is hungry you better watch out! I usually burp him when he's half way through, so I proceed to do so. But, he just would not burp and his little belly was so tight! (Caston has acid reflux very bad...so it sometimes take forever to get him to burp.)

He wouldn't burp and was screaming by this time bc all he wanted was his food. So, we started feeding again. After he finished he was completely satisfied. I laid him on my shoulder and he laid his head down gently and was cooing. (Nothing is more sweet than a baby cooing.)

Then is came.

On big ole loud, nasty, hard burp! I mean LOUD...

And the chair, my back, my hair and my neck was covered in baby puke. (We call Caston "Mr. Puke" around the house...his reflux makes him spit up a lot and even hours after a feeding.)

I couldn't believe I was sitting in living room at 5 am covered in puke...funny thing Caston didn't have a drop of spit up on him. Just my luck right. I had to laugh...I mean my husband was gone, it was the wee hours of the morning and I was covered in puke. I was just thankful that our furniture was leather, not cloth.

Oh, what we go through for our children, so that someday they can grow-up and become teenagers and forget all the things their parents did for them. The sacrifices they made, the many nights they stayed up with us when we had a cold, those blow-out diapers, the puke, the sleeplessness...the list goes on and on.

Wait. I need to call my parents and thank them. You should do the same.

If you are really trying to tell mom how much you appreciate all she's done for you...try these Chocolate Cupcakes. You are sure to make her day! (BTW I lived off these when I was pregnant...so good.)

Chocolate Cupcakes

Makes about 16 cupcakes

1/2 cup (50 grams) Dutch-processed cocoa powder
1 cup (240 ml) boiling hot water
1 1/3 cups (175 grams) all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (113 grams) unsalted butter, room temperature
1 cup (200 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract

Chocolate Fudge Frosting:
4 ounces (120 grams) unsweetened chocolate, coarsely chopped
2/3 cup (150 grams) unsalted butter, room temperature
1 1/3 cups (160 grams) confectioners (powdered or icing) sugar, sifted
1 1/2 teaspoons pure vanilla extract

Chocolate Cupcakes:
Preheat oven to 375 degrees F (190 degrees C). Lightly butter, or line 16 muffin cups with paper liners.

In a small bowl stir until smooth the boiling hot water and the cocoa powder. Let cool to room temperature.

In another bowl, whisk together the flour, baking powder, and salt.

Then in the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Beat in the vanilla extract. Add the flour mixture and beat only until incorporated. Then add the cooled cocoa mixture and stir until smooth.

Fill each muffin cup two-thirds full with batter and bake for about 16-20 minutes or until risen, springy to the touch, and a toothpick inserted into a cupcake comes out clean. Remove from oven and place on a wire rack to cool. Once the cupcakes have completely cooled, frost with icing. You can either spread the frosting on the cupcakes with a small spatula or if piping, use a large Wilton 1M open star tip to make lovely swirls.

Chocolate Frosting: Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature.

In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until it is light and fluffy (about 2 minutes). Beat in the vanilla extract. Add the chocolate and beat on low speed until incorporated. Increase the speed to medium-high and beat until frosting is smooth and glossy (about 2 -3 minutes).

I've had a couple of folks ask if I'm cooking as much anymore with the new little one- the answer is yes! I've just been busy with work and baby time it's been a little difficult to keep up with my blogs and other social media sites. But I'm learning how to get more done with an infant more and more each day....plus the little man is on a pretty good schedule now and gives mama time to get her work done.

Here's a new recipe that we really enjoy around our house. With just having a baby, I'm now trying to get back into "prebaby" shape. This recipe is sure to please not only the taste buds, but also the waist. Most Chicken Piccate recipes are made with a fatty, rich cream sauce- but this recipe is just the opposite- and tastes just as good.

Chicken Piccata with Pasta and Mushrooms

6 ounces whole-wheat angel hair pasta
1/3 cup all-purpose flour, divided
2 cups reduced-sodium chicken broth
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground pepper
4 chicken cutlets (3/4-1 pound total), trimmed
3 teaspoons extra-virgin olive oil, divided
1 10-ounce package mushrooms, sliced
3 large cloves garlic, minced
1/2 cup white wine
2 tablespoons lemon juice
1/4 cup chopped fresh parsley
2 tablespoons capers, rinsed
2 teaspoons butter

Bring a large pot of water to a boil. Add pasta and cook until just tender, 4 to 6 minutes or according to package directions. Drain and rinse.

Meanwhile, whisk 5 teaspoons flour and broth in a small bowl until smooth. Place the remaining flour in a shallow dish. Season chicken with 1/4 teaspoon salt and pepper and dredge both sides in the flour. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add the chicken and cook until browned and no longer pink in the middle, 2 to 3 minutes per side. Transfer to a plate; keep warm.

Heat the remaining 1 teaspoon oil in the pan over medium-high heat. Add mushrooms and cook, stirring, until they release their juices and begin to brown, about 5 minutes. Transfer to a plate. Add garlic and wine to the pan and cook until reduced by half, 1 to 2 minutes. Stir in the reserved broth-flour mixture, lemon juice and the remaining 1/4 teaspoon salt. Bring to a simmer and cook, stirring, until the sauce is thickened, about 5 minutes.

Stir in parsley, capers, butter and the reserved mushrooms. Measure out 1/2 cup of the mushroom sauce. Toss the pasta in the pan with the remaining sauce. Serve the pasta topped with the chicken and the reserved sauce.

Double Cranberry Muffins

Cranberries have been one of my favorite dried fruits to snack on during my pregnancy. I’ve put them on everything- salads, pork stuffing and I really like these healthy cranberry muffins from the recipe archives of What to Expect!

Yes, the muffins are a sweet treat, but they are very healthy. Notice the ingredients! I like to have a muffin for breakfast with a tall glass of milk! Enjoy...

Double Cranberry Muffins
From What to Expect.com

¾ cup whole wheat flour
¼ cup ground flaxseed or oat bran
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1½ cups old-fashioned oats
2 large eggs
1 cup white grape juice concentrate
½ cup all-fruit cherry or raspberry preserves
1/3 cup canola oil
2 tsp vanilla extract
½ cup fresh or frozen cranberries
½ cup dried cranberries (preferably unsweetened)

Preheat oven to 375F. Line a standard-sized 12-cup muffin tin with paper liners. In large bowl, combine flour, flaxseed, baking powder, soda, and salt. Stir in oats. In another bowl, combine eggs, juice concentrate, preserves, oil, and vanilla until smooth. Slowly stir into flour mixture; be careful not to overmix. Gently fold in all the cranberries.

Spoon batter into prepared muffin tin. Bake 18 minutes, until a toothpick inserted into the center comes out clean. Transfer to wire rack; let cool completely. Store muffins at room temperature in tightly sealed container for 3 days or frozen for 3 months.

Blueberry Cheesecake Muffins

It's surprising to me that being pregnant I haven't really cooked a whole lot of new dessert recipes. Guess i just turn to the old stand byes- guess that's human nature in us all though.

My sister-in-law Annie gave me a cookbook awhile ago and I was thumbing through it last week (I finished my fifth baby book and was in the reading mood- just completed the book Your Best Birth...I think it's the one book every pregnant woman should read). I came across a recipe for Blueberry Cheesecake Muffins and thought to myself...cream cheese, blueberries and lemon peel- how could you go wrong!

I also liked that the recipe included healthy ingredients like bran flakes! I just took these lovely muffins out of the oven about 30 minutes ago and they smell and taste wonderful!

They will make me and Caston (our little one that's on the way) a great late night snack tonight and a sweet start to breakfast in the morning!

Blueberry Cheesecake Muffins
1 pkg cream cheese, softened
1 cup, plus 1 T sugar or sugar substitute
2 eggs
1 tsp grated lemon peel
1 tsp vanilla
3/4 cup bran flakes cereal
1/2 cup all purpose flour
1/2 cup soy flour (or just use another 1/2 cup of ap flour)
2 tsps baking powder
1/4 tsp salt
3/4 cup milk
3 T melted butter
1 jar of no sugar added blueberry fruit spread (you'll find it with the jams and jellies at your local grocery store)
1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. spray 12 muffin cups with nonstick cooking spray.

Beat cream cheese in medium bowl until smooth. Add 3/4 cup sugar, 1 egg, lemon peel and vanilla and beat.

Combine cereal, flour(s), 1/4 cup sugar, baking powder and salt in medium bowl. Whisk milk, butter and 1 egg in small bowl, then add to cereal mixture. Mix gently until blended.

Spoon about 2 T of cereal batter into all muffin cups. Spread a about 1 tsp of fruit spread on top of batter. Then spread cream cheese mixture over fruit spread. Combine remaining 1 T of sugar and cinnamon; sprinkle mixture over cream cheese mixture.

Bake 33 minutes or until toothpick comes out clean when inserted. Cool muffins for about 10 minutes. Refrigerate leftover muffins.

Another State Fair Down

I apologize for the blog not being updated for awhile. Each year during this time I sorta blank out because of the Missouri State Fair. We just got back today from the fair and I am so thankful for another fair to be done.


At the fair I help organize and run the Missouri State Fair Farmers' Market, which takes a lot of work and time. Plus, this year we added local food cooking demos to the area. I conducted 7 cooking demos and they went very well. I'm amazed how each time a do one it gets easier and easier.

We had both professional and amateur chefs and all demos were very well attended. Missouri Farmer Today had a nice article about the area, as well as a tv report from KOMU TV.

One of the four different recipes I demonstrated was a very quick and simple recipe for what I call "dressed-up tomatoes." This is how we like to eat tomatoes at our house. I coudl actually make a dinner out of eating tomatoes and veggies!

Dress-Up Tomatoes

3-4 different heirloom tomatoes, sliced
feta cheese, herb flavored
balsamic vinegar
basil leaves, chopped
kosher salt

On a tray, plate your tomato slices. Sprinkle with a little kosher salt, drizzle with balsamic vinegar and sprinkle with feta cheese and fresh basil.

* This is a very easy way to add some zing to a simple plate of tomatoes.

Pasta with a Twist

It always amazes me how well my husband and I work as a team. Yes, it wasn't always like that. Every couple has to learn about one another and it's not always easy, but it sure is a fun journey! It's taken us a little over 5 years, but we think we have a lot of it figured out.

Building our little man's baby room proved just that. From painting (no, I didn't paint, but I like to say I helped supervised), putting together the furniture, deciding on a theme for the room...it's all about teamwork.

We are definitely going to have to learn about teamwork when our little man comes in November- that's a given. But, I'm not worried. I know that together- Charlie and I make an incredible team and will make great parents.

It all really started right after we got married and started cooking together. Through the years we both cook dinners together about every night and I truly cherish those times.

Tonight was one of those nights in the kitchen. We were both hungry, but didn't feel like making a meal that would take forever- so we opted for a quick pasta dish. Garden tomatoes and basil, capers, olives...and some grilled chicken breast. Talk about a light and healthy meal- and oh so delicious!

Try this recipe for a weeknight meal- you won't regret it!

McConnell Fresh and Light Pasta
3 cups Penne Pasta (wholegrain)
1/3 cup kalamata olives, diced
2 T. capers
1/2 cup garden tomatoes, diced
15 basil leaves, chopped
1 lemon squeezed
3 T. olives oil
1 tsp. garlic powder
2 grilled chicken breasts, sliced

Toss everything in a large bowl and serve with toasty french bread!

Just Peachy Breakfast Shake

It seems all I do anymore is eat- 24/7. And, if I’m not eating I’m hungry! But, I guess it comes with the territory of being pregnant- 21 weeks and going strong.

I can’t complain though- I’ve had a wonderful pregnancy and told my husband how much I enjoy being pregnant.

We found out that our house will be expecting a little boy come November. My husband was very pleased, knowing that he will have a little fishing buddy in the near future and!

Here is a quick breakfast treat that is both healthy and flavorful! I found this recipe on What to Expect.com.

Just Peachy Breakfast Shake
1 medium banana, frozen and sliced

1 cup frozen unsweetened peach slices
¾ cup vanilla yogurt
½ cup calcium-fortified cranberry juice
Soy protein powder (optional)

Place all ingredients in blender or food processor and process until pureed. Pour into a tall glass and serve.

The True Way to a Pregnant Woman’s Heart

I have discovered the way to any pregnant woman’s heart - that’s right. And there’s no rhyme or reason to it.

I was making Red Velvet Cupcakes the other night for a co-workers wedding shower when I discovered the way to my heart- Red Velvet Cake! After frosting one of the delicate little bright red cupcakes with loads of homemade cream cheese icing I decided that I needed to taste one of my homemade treats- just to be sure that it was kitchen approved.

As I slowly enjoyed the first bite my taste buds came alive! WOW- Red Velvet cake had never tasted so good. I finished eating the cupcake and began to ice the rest of my cupcakes. My husband was laughing at me- knowing that I would just have to go back for one more cupcake eventually. (And he was right)

I iced a few more cupcakes, then put a glass in the freezer. I iced some more cupcakes and then decided it was time for another cupcake- paired alongside my frozen glass of milk. WOW!

I ended up having three cupcakes that night and two frozen mugs of milk- but it was so worth it!

Here is the recipe for the Red Velvet Cake (which by the way is now officially my favorite cake). This is a wonderful recipe because the cake calls for buttermilk. I also get cake recipes that call for buttermilk because the buttermilk makes the cake crumbs so soft and flaky. Hope your taste buds agree that this cake is a winner.


Red Velvet Cake
2 1/2 cups sifted cake flour
1/2 teaspoon salt
2 tablespoons Dutch-processed cocoa powder
1/2 cup unsalted butter, at room temperature
1 1/2 cups granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup buttermilk
2 tablespoons liquid red food coloring- don't skimp on this or your cake will not have that pretty red color
1 teaspoon white distilled vinegar
1 teaspoon baking soda
Cream Cheese Frosting
1 1/2 cups heavy whipping cream
1 -8 ounce cream cheese, room temperature
1 - 8 ounce tub of Mascarpone cheese, room temperature
3/4 teaspoon pure vanilla extract
1 cup confectioners' (icing or powdered) sugar, sifted

Preheat oven to 350 degrees F and place rack in center of oven. Butter two - 9 inch round cake pans and line the bottoms of the pans with parchment paper. Set aside.In a mixing bowl sift together the flour, salt, and cocoa powder. Set aside.

In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined. In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk, in three additions, beginning and ending with the flour.In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.

Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 25 - 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Once the cakes have completely cooled, wrap in plastic and place the cake layers in the freezer for at least an hour. (This is done to make filling and frosting the cakes easier.)

Gotta a Craving

What to do when a craving hits…that’s been my dilemma lately. Do I indulge, do I ignore the craving, what is a healthy option to fulfill the grumble in my tummy.


I’ve had cravings and food aversions all at the same time for the past month and a half- how does this happen- will being pregnant your body is totally out of wack. At least that is what I have decided, but I wouldn’t change it for the world! (Yes, many readers lately have been asking about the new label on the blog “pregnancy recipes” and yes they were correct the McConnell’s are expecting a little one November 18.) We are very excited - here is our Week 9 photo!

I’ve been reading What to Expect When Your Expecting and I laugh at some of the things I have learned about the pregnant body. Like that “gotta go feeling” that stays with you, the sleepless nights because you have to get up to go to the bathroom 5 times a night, or maybe it’s the way I can be so sick feeling at my stomach- BUT at the same time crave Honey Nut Cheerios or Bananas by the dozen! (Yes- that’s right Cheerios!) Or my favorite- being so tired that I fall asleep at 6pm after eating dinner.

You have to love being a woman! And no matter what-I wouldn’t change it for the world!
I’ve read that for those that have the all day morning sickness or upset stomachs that lemons help- and it’s worked for me. Drinking lemonade, making lemon spaghetti, or simply putting lemon in my water has soothed my stomach so far.

Lightened-Up Lemon Bars

Crust
Nonstick cooking spray
1/4 cup unsalted butter, softened at room temperature
1/4 cup granulated sugar
1 cup flour
1/4 teaspoon salt
1/2 teaspoon grated lemon zest
Topping
1 whole egg
2 egg whites
1 cup granulated sugar
1 teaspoon flour
1/2 teaspoon baking powder
1/3 cup lemon juice, freshly squeezed (about 2 juicy lemons)
1 teaspoon grated lemon zest
Confectioner's (powdered) sugar for dusting

Preheat oven to 350° F. Coat an 8-by-8-inch pan with cooking spray. For crust: Cream together butter and sugar; add flour, salt and lemon zest. Beat until crumbly and pat into pan. Bake for 18-20 minutes or until golden. Remove from oven; let cool. While crust is baking, prepare the topping: Whisk egg and egg whites until frothy. Add sugar, flour, baking powder, lemon juice and lemon zest; mix until combined. Pour mixture over crust and bake for an additional 25 minutes or until topping is set and slightly golden. Cool on a wire rack; dust with confectioner's sugar and cut into 16 2-inch squares. Refrigerate if not serving immediately.

Serves 8.

Cranberry Lovers Muffins

Who doesn't like cranberry muffins for a nice morning treat! Pair up these muffins with a cold glass of milk, add a little butter to the muffins when they come out of the oven- and you can't go wrong!


Don't like cranberries substitute for blueberries.

Cranberry Lovers Muffins
¾ cup whole wheat flour

2 tsp baking powder

½ tsp salt

1 cup white grape juice concentrate

Goat Cheese Pizza

“Oh how yummy!” “One more piece….and another and another.”

Yes, that is what I sound like when I’m indulging in one of my favorite “treats” - goat cheese.

I had always liked goat cheese, but after our vacation to visit my husband’s family in Spain this past summer – I have become a fan of goat cheese. Goat cheese on crackers, with salami, top on a salad or pasta, stuffed with chicken….there are so many wonderful combinations.

Many folks say they don’t like the taste of goat cheese, but that’s probably because they have sampled goat cheese that wasn’t stored properly. Sometimes many of the grocery stores that sell goat cheese haven’t properly stored the cheese, therefore making the cheese have a “rancid” taste. I assure you there is nothing rancid tasting about goat cheese, quite the opposite – goat cheese is smooth, creamy and a “taste for the ages.”

If you are one of these type people that has tried goat cheese only once and now swears you will never try it again – I’m here to change your mind.

In Missouri we have lots of wonderful goat cheese operators that sell their products at many farmers markets and other marketing outlets.

One of my favorite goat cheese farms is from Goatsbeard Farm. The owners, Ken and Jenn Muno, are a wonderful couple whom I purchase lots of goat cheese from throughout the year at the Columbia Farmers’ Market. Goatsbeard is a small family farm dedicated to creating a sustainable livelihood from the land, as the family strives to produce excellent cheese while protecting the water quality of their watershed, enhancing the soils with natural fertilizers, and improving biodiversity.

Goat cheese, like goat milk, is easier on the human digestive system and lower in calories, cholesterol and fat than its bovine counterpart (but that doesn’t keep me from my cow’s milk). Goat cheese is rich in calcium, protein, vitamin A, vitamin K, phosphorus, niacin and thiamin. So, why not give it a try – improve your taste palate and your health!

One of my family’s favorite goat cheese recipes is our McConnell Goat Cheese Pizza. You can incorporate whatever your favorite vegetables are (we like to use bell peppers, eggplant, olives and sun-dried tomatoes).

McConnell Goat Cheese Pizza
Dough:
1 teaspoon honey or sugar
2 tablespoons yeast
3 cups unbleached white flour salt
2 tablespoons olive oil

Toppings:
Sauce (try using a pesto instead of a tomato based sauce)
8 ounces Goat Cheese (Chevre, Teleme and/or Feta)
1 1/2 cups topping of choice: sliced bell peppers or roasted red peppers, caramelized onions, sautéed mushrooms, eggplant, chopped olives, sun-dried tomatoes or anchovies.

Dissolve honey or sugar in 1 cup warm water. Add yeast, and set in a warm place for about ten minutes. Foam will form on the surface of the yeast.

Meanwhile, put the flour into the food processor (using metal blade) with a dash of salt. Drizzle in the olive oil, followed by the yeast mixture. When the dough forms a ball (motor will begin to slow down), place it in an oiled bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours.

Punch down and roll into desired shape.

Cover the surface of the dough with sauce, and top with 8 ounces of goat cheese and toppings of choice. Bake in preheated 400 degree oven for 10-14 minutes until crust turns golden. Brush the edge of the crust with a little olive oil before serving.

Simple Grape Salad

When it comes to food- I want simplicity. Sometimes we get bogged down by fancy recipes with extravagant spices and ingredients, that we loose the true taste of the food.

That’s why I enjoy this recipe so much. It’s my mother’s recipe for a simple grape salad (that I served for Christmas dinner). The key to a this recipe is ensuring the grapes are ripe and tasty. Plus, I only use Missouri Northern Pecans because they are sweet and small (you can find them in most all grocery stores.)

Simple Grape Salad
By My Mother


2 ½ lbs. grapes
1 (8oz.) cream cheese, room temp.
1 tsp. vanilla
½ cup powdered sugar
1 cup sour cream
½ cup brown sugar
½ cup chopped pecans

Mix cream cheese, powdered sugar and vanilla until smooth. Fold in sour cream and add to grapes. Mix brown sugar and nuts together and sprinkle over grapes.
